Ramadan Recipes

It is that time of the year when we celebrate Ganesh Chaturthi. There are a variety of sweets made on this occasion and offered to the Lord Ganesha. Today I’ll talk about the delicacies prepared in Malaysia…. not for this festival but for another festival called Eid or Ramadan.

Ramadan bazaars are full of Malay dishes – curries, rendang, porridges, roasts, and rice cakes in endless varieties together with sweets, pastries and traditional juices. What better way to start with sweet dishes which I learnt in a culinary class on my last visit to Malaysia?

The following two Ramadan recipes are very simple. Even a child can make the dishes. Try these yourself and enjoy!

1. Crystal Sago (Sabudana) in white sauce

Ingredients:
Crystal Sago (soaked for 20 minutes) ……. 1 cup
Water …………………………………………… 1 cup
Sugar ………………………………………… 3/4 cup
Pinch of salt
Red color & rose essence

Corn flour ……………………………………. 3 Tbsp
Salt …………………………………………… 1 Tsp
Coconut milk ……………………………….. 2 cups

Screw pine leaf (optional, for decoration) .. 3

Method:
1. Strain the soaked Sago and cook it with sugar & 2 cups of water.
2. Add coloring, essence and pinch of salt.
3. Pour into small moulds till they are half filled and let it set.
4. In another pan, mix and cook coconut milk, corn flour and salt while continuously stirring for 5 minutes to thicken. If it thickens more than the pouring consistency then add 1 cup of water.
5. Fill the moulds with this mixture. Decorate with Screw pine leaf.

2. Sirap Bandung (Evaporated milk) Selasih

Ingredients:
Red Sugar Syrup ………………………………. 1 cup
Water …………………………………………… 2 liters
Sugar ……………………………………………. 2 cups
Evaporated milk ……………………………….. 1/2 cup
Biji Selasih or Basil seeds soaked (Subza in Hindi) …….. 1/2 cup
Rose essence …………………………………. few drops
Edible color of your choice ………………………. 2 Tsp
Cinnamon ………………………………………… 2 sticks
Fennel seeds (Saunf in Hindi) …………….. 1 pinch
Rice cubes of 1 inch (Optional) ………………. 2 cups
Screw pine leaf ………………………………… 1

Method:
1. Except Basil seeds, mix all ingredients in a large bowl. Keep it aside.
2. Strain the mixture before serving.
3. Add Basil seeds in it.
4. Add rice cubes if you want.
5. For serving take 1 cup of above syrup and add some ice. Have it chilled.
